Our pasta is made with Russello and Timilia Sicilian Heirloom Wheat. These Grains are NOT GMO, and they do NOT need pesticides, chemicals, or glyphosate to grow and ripen. The reason is simple. They have been integrated for centuries into Sicilian biodiversity. Therefore, they can coexist within the island ecosystem and thrive naturally without unnecessary human intervention. The ancient (heirloom) Sicilian grains are the answer to the needs of environmental sustainability, ethical food sourcing and human health.
